Onion Rings (keto)

Keto Onion Rings
Yield: 8 rings // per ring: 87 calories, 8g fat, 1.5g protein, 2g net carbs

1 large onion
2 eggs

2 tablespoon coconut flour
2 tablespoon finely-grated parmesan cheese (I use a microplane)
1/8 teaspoon garlic powder
1/4 teaspoon parsley flakes
1/8 teaspoon cayenne pepper
salt to taste
1/4 cup canola oil for frying

Heat the oil in a medium saute pan.

Beat the eggs in a shallow bowl.

Combine the dredging ingredients: coconut flour, parmesan, garlic powder, parsley flakes, cayenne, and salt in another shallow bowl.

Slice the onion into 1/2-inch slices, and break them up into a big pile. Add all the onion slices to the beaten eggs.  Mix thoroughly until well coated. Soak onion slices in the egg for a minute or more.

In small batches, dip the onion slices first in egg, then in dredging mixture. Repeat.

To cook, drop one at a time into hot oil.

Fry until golden brown on one side, then turn with a fork or tongs to brown the other side. Remove to a plate lined with paper towels to soak up any excess oil.
