Generally, I top my morning steel cut oats with half a chopped apple, a few chopped walnuts, two chopped dates, and a splash of plain almond milk. But lately, I’ve been wanting savory flavors, so I’ve been creating these, which always incorporate greens, and come in a variety of flavor profiles from around the world. Here’s my collection—
Steel cut oats, an equal amount of chopped kale, some chopped tomatoes, red bell peppers, maybe a few slices of zucchini, nutritional yeast, smoked paprika, onion powder, garlic powder, cumin, pinch of cayenne or chili powder. Water or veggie stock as needed for the sauté. Top with salsa and chopped cilantro.
Cooked steel cut oats, an equal amount of cooked/chopped kale, curry powder*, tomato sauce, chopped tomatoes, water-sauteed onions, minced ginger, garlic, pinch of cayenne + chopped cilantro.
*Actually, I made my own curry mixture of curry leaves, coriander, ginger, garlic, chili pepper, poppy seeds, mustard seeds, cinnamon, cloves, cardamom, cumin, fennel seeds, nutmeg, and turmeric…but curry powder will work, too 🙂
Cooked steel cut oats, equal amount of cooked/chopped kale, oil-free pasta sauce, grated zucchini, a few halved cherry tomatoes, water-sauteed onions, mushrooms, and garlic, chopped basil, a dash of cayenne.
Cooked steel cut oat (quinoa is good here, too), an equal amount of cooked/chopped spinach, tomato sauce, chunks of butternut squash, red bell pepper, oregano, cumin, and pepper flakes.
Cooked steel-cut oats (brown rice is good here, too), an equal amount of cooked/chopped bok choy, mushroom stock thickened with potato starch, water-sauteed shiitake mushrooms, fresh ginger, shallots, water chestnuts, green beans, tamari, chili pepper flakes, sliced carrots.
Cooked steel cut oats, an equal amount of cooked/chopped spinach, herbs d’provence, saffron, parsley, thyme, marjoram, bay, sage, tarragon, nutmeg, garlic, splash of balsamic vinegar, and mushrooms cooked in a potato-starch-thickened mushroom broth.
Cooked steel cut oats, an equal amount of cooked/chopped savoy cabbage, and carrots, potatoes, tomato sauce, caraway, parsley, sage, rosemary, thyme, powdered mustard.
