Breakfast Smoothies

I like for one of my meals—usually breakfast—to be a smoothie made with veggies and fruit. I also add one superfood powder: 1 ounce of one of the following–spirulina powder, unsweetened cocoa powder, wheatgrass powder, or a vegan protein powder.

Here’s a lightly-modified recipe from Rip Esselstyn’s “The Engine 2 Rescue Diet.” These delicious breakfast cakes are fat-free, refined sugar-free, and packed with flavor 🙂
Cinnamon Citrus Oat Pancakes

Vegan Pancakes

These pancakes are wonderful for breakfast with fruit toppings, but they can also make a great lunch or supper topped with savory foods like curries, ratatouille, thick soups and stews, or chili.

Vegan Pancakes
Yield: 6 large pancakes

1 cup whole wheat pastry flour
1 tablespoon + 1 teaspoon baking powder

Banana Bread

Although I’ve listed the chocolate chips as an optional ingredient, I personally consider it a core ingredient in banana bread. Those little melty chocolate spots within the sweet banana bread add even more joy to tastebuds!

Swedish Tea Ring

This has been a Christmas morning tradition in my family for over sixty years and counting, and although it contains sugar, I decided to add it to my blog.
