Scalloped Potatoes

This is a wonderful dish for special occasions. If you’re eating low carb, substitute cauliflower, sliced into flat pieces, and use all cream.

Vegan Potatoes Gratin

Here’s a special occasion vegan dish. It’s very easy to make and has a somewhat “cheesy” quality from the nutritional yeast. Yum!

3 tablespoons olive oil (for less fat, use low fat vegetable stock)
8 cloves garlic, minced
3 tablespoons whole wheat pastry flour

Engine 2 Chili Cheeze Fries

Ami Mackey, over at Engine 2 Diet, developed these Chili Cheeze Fries, and we’re having them for supper tonight … although I ended up just piling baked potatoes with the chili and cheeze and added some chopped tomatoes, green onions, and a few slices of avocado on top.
