This soup is a modified version of a Forks Over Knives recipe, and the results are outstanding. I love making food that only needs rough chopping! To make it more hearty, you could add a 1/4 cup black beans to each bowl.

“Eatloaf”, vegan meatloaf, or whatever you like to call these savory loaves, they really make a meal special. This recipe is based on Rip Esselstyn’s Engine 2 “Grandpa’s Eatloaf”
. If you haven’t checked out his recipe books, now’s the time—they’re vegan, low fat, low sodium, and totally delicious.
Makes 2 loaves
2 cups homemade cashew milk or Silk Cashew Milk (yummy & rich!)
½ cup Trader Joe’s extra thick and creamy Coconut Cream
