My sweetie and I like to make low-carb stews, pot roasts, braises, chili, curries, soups—and desserts—especially since cool weather in the Pacific Northwest favors those kinds of foods for most of the year.
So to simplify our lives, we just bought a six-quart Instant Pot. After breakfast, we’ll prep a pot full of something tasty, set the pressure, and walk away until dinner time.
Note: To make recipes even lower in carbs, use dehydrated onions flakes instead of whole onions, eliminate carrots, and replace the lost bulk with mushrooms and/or red bell peppers.
If Using Frozen Chicken: Add 1-2 minutes to the cooking time.
Remember to always use clean foods—grass-fed meats and milk products, wild-caught fish, organic vegetables—your health (and heart) will thank you.
