Homemade Nutella (low carb)

Homemade Nutella
Yield: about 2-1/2 cups, or 20 two-tablespoon servings at 2g carbs

3/4 cup Trader Joe’s toasted and husked hazelnuts
2 to 3 tbsp melted coconut oil
2 tbsp cocoa powder
2 tbsp powdered Swerve Sweetener
1/2 tsp vanilla extract
Pinch salt

Grind hazelnuts in a food processor until finely ground and beginning to clump.

Add two tablespoons of the coconut oil and continue to grind until the nuts create a smooth butter. Add remaining ingredients and blend until well combined. If the mixture seems too thick, add another tablespoon of oil.

Scoop into a jar, seal tightly and refrigerate to store…if you can wait!
