Spiced Minute Cupcake with Vanilla-Orange Frosting

Here’s what I reach for when I’m longing for a cinnamon roll for breakfast. Guilt free, filling, and nutritionally balanced, this little breakfast item is the low carb equivalent of a cinnamon bran muffin with cream cheese frosting.

Spiced Minute Muffin
Two servings // 231 calories, 2 net carbs

2 tablespoons golden flaxseed meal
2 tablespoons almond flour
4-6 drops liquid stevia glycerite
1/2 teaspoon cinnamon, ground
1/4 teaspoon cloves, ground
1/2 teaspoon baking powder
<1/8 teaspoon sea salt
1 tablespoon coarsely-chopped pecans
1 large egg
1 teaspoon Kerrygold butter, melted

Orange Cream Cheese Frosting
2 tablespoons organic full-fat cream cheese, warmed
2 teaspoons butter, softened
6-9 drops liquid stevia glycerite
1/8 teaspoon Nielson-Massey Madagascar Bourbon vanilla extract
2-3 drops orange oil
<1/8 teaspoon Celtic sea salt

Combine all dry ingredients together in a bowl and whisk them a bit to mix. Add the wet ingredients and whisk until well-mixed. Pour into two buttered 1/2-cup ramekins.

Microwave on high for 60-90 seconds. (I test at 60 seconds by softly tapping the top of the muffin for firmness)

While the muffin is cooking, beat together cream cheese, butter, powdered sugar equivalent, vanilla, orange oil, and salt. Make sure the cream cheese and butter are soft before whipping.

Once your muffins are done, mound with frosting, pour a cup of coffee, and enjoy!IMG_3657
