Fat-Free Fried Rice

This isn’t actually “fried” but incorporates the same ingredients and then cooks everything in a bit of water or vegetable stock instead of oil. All the flavor, none of the fat. win-win!

Fat-Free Fried Rice
2 servings as a main course, 4 servings as a side dish

1/2 cup green onions, diced
3 cloves garlic, minced
1 cup carrots, diced
1 cup frozen peas
4 cups cooked brown or jasmine rice
2-3 tablespoons low-sodium tamari
1 tablespoon Sriracha sauce
1/4 cup chopped cilantro
Several tablespoons sesame seeds

Heat a nonstick skillet over medium heat. Add the green onions, garlic, carrots, and peas, and about a 1/4 cup water or vegetable stock. Cover, and cook until carrots are soft, about 10 minutes.

Add the cooked rice, tamari, Sriracha and stir once more. Reduce the heat to low and heat until everything is warmed through. Garnish with cilantro and sesame seeds.

If using as a main course, crispy tofu can be added, too.
