Lamb Keftas, or spiced lamb patties (low carb)

Lamb Keftas
Serves 2 // 686.2 calories, 53.8g fat, 7.42g net carbs, 39.5g protein

1 pound / 500g ground lamb
2 tablespoons minced red onion
3 cloves garlic, minced
1 tablespoon minced cilantro
1 tablespoon minced parsley
1 tablespoon minced mint
1 teaspoon cumin
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper

Add all ingredients together in a big bowl and mix well with your hands.

FOR SKEWERS
With damp hands, divide the meat into 8 equal pieces and push and shape the meat into oblongs around 8 skewers of about 2 ounces each.
FOR PATTIES
Shape into two patties.

COOKING (cook until internal temp = 145 degrees)

STOVETOP METHOD
Preheat 1/2 tablespoon extra virgin olive oil in a large skillet over medium high heat. Cook in batches for 5 minutes in total, turning to brown evenly all over.

GRILL METHOD
Grill on medium high for about 6 minutes, rotating to brown all sides.

Grilled zucchini makes a great side dish.

1 cup Greek yogurt
1 clove garlic, minced
1 teaspoon cumin
1 tablespoon lemon juice
