Stuffed, Roasted Cornish Game Hens for Two (keto)

Although the 2020 pandemic was a very challenging year for the world, we made this recipe for Thanksgiving, grateful for surviving … and thriving.

Stuffed, Roasted Cornish Game Hens
Serves 2 // 1227 calories, 96.6g fat, 85g protein, 7.33g net carbs

1/6 recipe Bread Stuffing (keto)
(Alternatively, make entire stuffing recipe and use the balance for other meals)
1 tablespoon melted butter
1 tablespoon chicken broth
pinch dried sage
pinch poultry seasoning
pinch salt
Dash pepper
2 Cornish game hens, about 1 pound each

Preheat oven to 400 degrees.

In a cup, combine melted butter and chicken broth. Set aside to use for basting.

Lightly stuff Cornish hens with dressing mixture; close the openings with skewers. Place hens in a roasting pan; bake for about 1 hour, until done. How to gauge that they’re done: (1) When hens reach an internal temperature of 170 degrees in the thickest part of the thigh. (2) When the juice from a punctured thigh runs clear. (3) When the hens have become nicely browned.

Baste Cornish hens occasionally with remaining butter and chicken broth (whisked together).
