Cajun Cauliflower-Pilaf

This is a great side dish for jambalaya. Small bits of cauliflower are processed into rice-sized pieces, giving the dish a very traditional look.

Cajun Cauliflower-Rice
Yield: 4 servings // 143 calories, 11g fat, 4g protein, 6g net carbs

24 ounces Purely Frozen Organic riced cauliflower
1 teaspoon celery seeds
3 tablespoons extra virgin olive oil
1 tablespoon onion powder
1 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 teaspoon chipotle chili powder
1/2 teaspoon smoked paprika
3 tablespoons champagne vinegar
1/4 cup Kirkland organic chicken broth
Salt, to taste

Microwave cauliflower rice for 7 minutes.

Cook all the ingredients—except vinegar and stock—in olive oil in a very large skillet over medium heat. Add all the dried seasonings, and stir to mix.

Lower the heat to medium, add the vinegar and chicken stock. Stir and cook until the cauliflower is tender and no longer tastes raw. Add salt to taste.
