Cauliflower Mac & Cheese (low carb)

Creamy, cheesy comfort food, that comes in at a measly 2 net carbs per serving.

Cauliflower Mac & Cheese
Serves 4 // 287 calories, 2 net carbs

1 pound frozen riced cauliflower
1/2 cup heavy organic whipping cream
2 ounces organic cream cheese, cubed
4 ounces grass-fed cheddar cheese, shredded
1/2 teaspoon Dijon mustard
1/4 teaspoon turmeric (for color)
1/4 teaspoon powdered garlic
Salt and white pepper to taste

Microwave the riced cauliflower in a covered glass bowl for 7 minutes.

Bring the cream to a simmer. Use a whisk to stir in the cream cheese and mix until smooth.

Add the shredded cheddar cheese, and stir. Add the Dijon mustard, turmeric, powdered garlic, salt, and pepper. Whisk until smooth. Add the microwaved cauliflower. Stir to mix.

Add a side dish of green vegetables like green beans, broccoli, spinach, or a green salad.

Serve with chipotle hot sauce.
