Mashed cauliflower is a great replacement for mashed potatoes on low-carb diets. My grocery stocks pre-riced cauliflower, but you can create your own by throwing cauliflower florets into a food processor and pulsing until the cauliflower pieces are the size of grains of rice. All milk products can be replaced with your favorite vegan versions, if desired.
Quick Mashed Cauliflower
Yield: 3 servings // 228 calories, 4 net carbs
10 ounces cauliflower, riced (1 small head of cauliflower)
1/4 cup grass-fed sour cream
3 tablespoons grass-fed butter
4 tablespoons grass-fed Parmesan
1/4 teaspoon garlic powder
2 tablespoons green onions of chives, chopped
Salt and freshly ground black pepper to taste
Microwave the riced cauliflower—covered with a paper towel—for five minutes.
Stir in the rest of the ingredients (use only half of the chives) and—using an immersion blender—blend until creamy. Serve sprinkled with the remaining chives.
Note: If ricing your own cauliflower, you can do that step up to two days before.
