Curried Tofu Salad

 

Curried Tofu Salad

2 cups tofu, cut into 1″ cubes
2 stalks of celery, diced
1 green onion, diced
1/3 cup raisins (only for those that can take the carbs)
1/3 cup almonds, chopped roughly
2 heaping tablespoons eggless mayonnaise
1 tablespoon mustard (I like the kind with whole grains)
1 teaspoon curry (or to taste)
Salt and cayenne to taste

Mix everything together. Taste. Adjust. Pile on a hearty whole wheat bread, heap in the middle of a salad, or stuff a tomato…it’s all good.
