Moroccan Cucumber Salad (shlada ‘arobiya)
Serves 4 // 118 calories, 11g fat, 1g protein, 6g net carbs

1 pound cucumber, peeled & cut into half circles
8 cherry tomatoes, quartered (2g net carbs per serving, delete if needed)
2 tablespoons fresh mint leaves, minced
1 shallot, minced
2 tablespoons fresh lemon juice
3 tablespoons extra virgin olive oil
Salt and pepper, to taste

Prep the ingredients.

Mix all ingredients together, then allow to marinate, refrigerated, for an hour … or at least 10 minutes
