Quick Chicken-Wild Rice Soup

Get ready for the easiest homemade soup ever, with the help of a quick-cook organic rice blend.

Quick Chicken-Wild Rice Soup
4 dinner-sized servings

1 pound skinless organic chicken breasts, cut into bite-sized cubes
32 ounces organic low fat chicken stock (1 box)
1 onion, diced
4 cloves garlic, minced
2 large carrots, diced
1 teaspoon dried thyme
1 teaspoon dried marjoram
1 bay leaf
1/2 teaspoon smoked paprika
1 cup  O Organics Quick-Cook Rice Blend

Mix all ingredients together, except for rice. You can sauté the veggies first, or not. Simmer for half an hour. Add the rice and simmer for another 15-20 minutes. That’s it!

—If you’d like it to have more liquid, add more chicken stock, not water.
—Other possible additions: chopped celery, diced potatoes, chard.
—Another way to add the rice: add 2 cups pre-cooked rice at the very end…or add 3/4 cup uncooked brown rice and a 1/4 cup wild rice to the soup at the very beginning, cooking a total of about 45 minutes.
