Pesto Pasta with Prawns
2 portions / 744.4 calories, 57g fat, 10.48g net carbs, 43.2g protein

1 pound medium to large shrimp peeled and cleaned
1 cup fresh basil
4 cloves of garlic
1/2 cup parmesan cheese, grated
1/2 cup pine nuts
Salt and black pepper
1/4 cup extra virgin olive oil
1 package Kibun Healthy Noodles
1 tablespoon chopped parsley, for serving

PRAWNS

Boil the shrimp until they are are pink and cooked through, about 2-3 minutes. Drain and set aside.

PESTO
In a food processor, add basil, garlic, parmesan cheese, pine nuts and a dash of salt and pepper. Blend, while slowly drizzling in the olive oil until the pesto comes together and is smooth. Scrape down the sides of the bowl as needed. Add a bit of water, if the pesto is too thick. Scrape the pesto into a large skillet and gently heat over low flame with the prawns.

PASTA
Prepare the Healthy Noodles by rinsing under hot water. Mound the noodles in large shallow bowls, then add the pesto-shrimp on top.

Serve the pasta topped with shavings of parmesan and some chopped parsley.
