Cilantro-Lime Cauliflower Rice (side serving)

12 ounces frozen cauliflower rice
2 tablespoons extra virgin oil
1 clove garlic, minced
1/2 teaspoon salt
1/4 cup chicken broth
1/2 cup chopped cilantro
1 lime, juiced and zested
Heat cauliflower in a microwave-safe bowl for about 7 minutes.
Heat oil in a large skillet over medium-high heat. Add garlic and sauté for 30 seconds. Add the cauliflower rice and salt; stir the rice for a minute. Add the chicken broth.
Sauté, stirring, for 15 minutes. Turn the flame off and add the lime juice, lime zest, and chopped cilantro. Toss everything together and serve.
