Bratwurst and Red Cabbage, Apples, and Onions

 

Bratwurst and Red Cabbage
Serves 2 // 769.4 calories, 40.1g protein, 59.1g fats, 18.46g net carbs

2 teaspoons extra virgin olive oil
1 small red onion, thinly sliced (70g)
Kosher salt
2 cups thinly sliced red cabbage
1/2 small Granny smith apple, peeled and chopped (180g)
2 teaspoons unsalted butter, cut into pieces
1/8 cup low carb beer
1/8 cup balsamic vinegar
Tiny pinch ground cloves
1/2 teaspoon caraway seeds
Freshly ground black pepper
1 pound bratwurst
Mustard, for serving (optional)

Heat 1 teaspoon olive oil in a medium skillet over medium heat. Add the sausages and cook, turning occasionally, until browned and heated through, 15 minutes or so.

While the sausages are browning, add 1 teaspoon olive oil oil to a large skillet over medium heat. Add the onion and a pinch of salt, and cook, stirring occasionally, until onion is softened, about 3 minutes. Add the cabbage and apple, and cook, tossing occasionally, until softened, about 5 minutes. Stir in the butter, beer, vinegar, tiny pinch of cloves, caraway, salt and a couple of grinds of pepper. Cover and cook until the cabbage is tender, about 10 minutes.

Serve the cabbage and sausages with some mustard on the side, if you like.
