Mashed cauliflower is a great replacement for mashed potatoes on low-carb diets, but it’s absolutely delicious regardless of one’s diet. Note: there’s a vegan version, here.
Rich Mashed Cauliflower
Yield: 2 servings // 218 calories, 15g fat, 12g protein, 6g net carbs
12 ounces Purely Frozen Organic riced cauliflower
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 teaspoons Kerrygold butter
1 ounce organic sour cream
2 ounces Kerrygold cheddar cheese, shredded
Salt and freshly ground black pepper to taste
Microwave the frozen cauliflower rice for 7 minutes. Add cauliflower rice to a food processor with the garlic and onion powders, butter, cream cheese, sour cream, cheddar cheese, salt and pepper. Pulse to combine. Serve immediately.
