Shrimp and Sausages with Baby Broccoli
Serves 2 // 484 calories, 29g fat, 49g protein, 2g net carbs

1/2 pound baby broccoli
1 tablespoon extra virgin olive oil
1/2 pound hot Italian sausages, sliced into coins
3 large garlic cloves, thinly sliced lengthwise
1/2 pound shrimp

Cut off and discard 1 inch from stem ends of baby broccoli. Cook it, uncovered, in 2 batches in a 6- to 8-quart pot of boiling salted water until just tender, about 3 minutes, transferring with a slotted spoon to a large bowl of ice and cold water to stop cooking. Drain well in a colander.

Heat olive oil in a large skillet and start browning the sausage. Add the garlic and cook, stirring occasionally, until garlic is golden, about 5 minutes. Add the shrimps and cook until they turn opaque and curl, about 5 minutes. Add baby broccoli and cook, tossing to coat with oil, until heated through, 3 to 5 minutes.

Serve in large shallow bowls, sprinkled with Parmesan, if desired.

Serve with cauliflower rice.
