I use this on my favorite kale salad, and it looks simple, but it has a sophisticated bite to it. Great on any salad, it’s also good as a dressing for a warm Asian veggies salad, too.
Yield: 8 servings, 1 tablespoon each
1 tablespoon lemon juice
1 tablespoon rice vinegar
6 tablespoons toasted sesame oil
1 tablespoon tamari (or coconut aminos)
Microwave the onion slivers for 30 seconds. Test a piece with the tip of a sharp knife to see if it’s lost its sharp crunch. Microwave a few seconds more, if needed. Goal: we’re just taking the edge off “raw”.
Whisk together the dressing ingredients and add the onions to the dressing to marinate a bit. Taste. Adjust.
