Thai Peanut Sauce

Thai Peanut Sauce
Yield: approx. 1 cup / 4 servings of 1/4 cup each

1/4 cup unsweetened peanut butter
2 tsp wheat-free tamari sauce (or coconut aminos)
1 tbsp Swerve sweetener (or SweetLeaf liquid stevia; taste-test 2-drop increments)
1 tbsp lime juice
1/4 cup coconut cream (skimmed from top of canned full-fat coconut milk)
1 clove garlic, minced
1 tsp sugar-free hot sauce
1/4 tsp toasted sesame oil
1/4 cup water, if needed

Whisk ingredients together, adding water to thin, if needed. Cook over medium heat until sauce begins to thicken. Serve cold.
