Chili-Citrus Chicken Wings

Chili-Citrus Chicken Wings

CHICKEN
3 pounds chicken wingettes and drumettes
Sea salt and black pepper
1/4 cup arrowroot powder

SAUCE
1/4 cup honey, warmed
3 tablespoons butter or avocado oil
2 teaspoons ancho chili powder
1/2 teaspoon chipotle chili powder
1/2 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon sea salt
Zest of 1 lime finely grated (or lemon zest)
1-1/2 tablespoons lime juice (about 1 lime)
(Alternative: lemon juice)
Fresh minced cilantro for garnish

Preheat oven to 425° F. Line a large rimmed baking sheet with aluminum foil, then place a wire rack within the baking sheet.

Pat wings dry with paper towel to absorb excess water. Measure arrowroot, salt, and pepper into a large mixing bowl. Toss 3-4 chicken wings in the arrowroot mixture, evenly coating. Set coated wings on wire rack/baking sheet. Repeat until all the wings have been coated.

Place baking sheet with chicken on the middle shelf of preheated oven. Bake for 30 minutes.

Meanwhile, make the sauce. Measure honey, butter, spices, salt, zest, and juice into a microwave-safe container and heat for 30 seconds. Stir. If needed, heat for an additional few seconds.

After the wings have baked for 30 minutes, brush them with the sauce, flip them over, brush the other side, and continue to bake for 10-12 more minutes.

Remove from oven and brush with any extra sauce. Garnish with cilantro and serve with any dips of your choice.
