Cauliflower Almond Pilaf (keto)

Cauliflower Almond Pilaf (side serving)
Serves 2 // 245 calories, 20g fat, 7g protein, 9g net carbs

12 ounces frozen riced cauliflower
2 tablespoons extra-virgin olive oil, divided
1/2 small shallot, minced

2 tablespoons chicken broth
Sea salt, to taste
1/4 cup sliced almonds
2 teaspoons minced fresh parsley

Heat cauliflower in a microwave-safe bowl for about 7 minutes, to par-cook.

Heat 1 tablespoon oil in large saucepan over medium-low heat until shimmering. Add shallot and cook until softened, about 1 minute. Stir in cauliflower, broth, and sprinkle with salt. Cook, stirring occasionally, until cauliflower rice is almost completely dry, about 5 minutes. Stir in remaining 1 tablespoon oil and season with salt and pepper to taste. Sprinkle with almonds and parsley and serve.
