Garlic Parmesan Cauliflower Pilaf (side serving)

12 ounces frozen cauliflower rice
2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
1/4 cup Parmesan
1/4 cup chicken broth
Sea salt, to taste
2 teaspoons minced fresh parsley
Heat frozen cauliflower in a microwave-safe bowl for about 7 minutes.
Heat olive oil in large saucepan over medium-low heat until shimmering. Stir in garlic and stir for a minute, then add the cauliflower, broth, and sprinkle with salt. Cook, stirring occasionally, until cauliflower rice is almost completely dry, about 5 minutes. Stir in the Parmesan and stir another minute or two. Sprinkle with parsley and serve.
