Thanksgiving Menu 2019 (version 2)

Even though our holiday table only has two people, I roast two ducks, which enables me to make Cassoulet (my low carb version) a few days after Thanksgiving. A Pinot Noir would pair well with this menu, with a late harvest chardonnay during dessert.

2 two-pound Long Island ducks (aka Pekin duck)
4 oranges
1 cup white wine (or citrus-infused vinegar)
2 cups organic chicken broth
1 cup orange juice (or citrus-infused vinegar with a drop or two of orange oil)
2 tablespoons Grand Marnier
1 cup frozen, unsweetened cherries, thawed
2 teaspoons balsamic vinegar
2 teaspoons sugar (or 8 drops liquid stevia glycerite)
