The inspiration for this recipe came from the All Day I Dream About Food blog, but I needed to tinker with it a bit to keep it within my macros,
Salad with Ham and Avocados
Serves 4 // 317 calories, 27g fat, 12g protein, 2g net carbs
Dressing
1/2 cup fresh cilantro leaves
1/4 cup organic cream
1/4 cup Primal Kitchen mayonnaise
2 cloves garlic, coarsely chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon chipotle powder
Salad
1 tablespoons extra virgin olive oil
6 ounces lean ham
8 ounces baby spinach
1 avocado, sliced
Freshly ground pepper to taste
DRESSING
Combine the cilantro, cream, mayonnaise, garlic, salt, pepper and chipotle powder in the bowl of a food processor or blender. Blend until smooth.
SALAD
Melt butter in a large skillet over medium heat. Fry ham until browned and crisped. Slice into matchsticks.
Divide spinach among 4 plates. Top with sliced ham sticks and avocado slices. Sprinkle with pepper and drizzle with dressing.
