Warm Kale Salad
Serves 2 // 256 calories, 34g fat, 5g protein, 5g net carbs

Salad
2 tablespoons extra virgin olive oil
4 ounces kale
2 ounces feta cheese
Salt and pepper, to taste

Dressing
4 tablespoons heavy whipping cream
1 teaspoon mayonnaise
1 teaspoon dijon mustard
2 cloves garlic

Blend the heavy cream, mayonnaise, Dijon mustard, and garlic together until smooth.  Set aside.

Rinse the kale and chop into bite-size pieces.  Discard the stem. Add the butter to a pan over medium heat.  Once hot, add the kale to the pan and quickly cook until a dark brown color comes out.  About 1-2 minutes.

Place cooked kale into a bowl.  Top with feta cheese and dressing.  Season with salt and pepper to taste.
