Keto Salad Nicoise

While this keto version of Salad Nicoise is missing some of its classical ingredients, it still delivers the same flavors.

Keto Salad Nicoise
Serves 2 // 539 calories, 49g fat, 14g protein, 6g net carbs

DRESSING
1/4 cup white wine vinegar
1/4 cup extra virgin olive oil
1 clove garlic, minced
1 teaspoon Dijon mustard
Salt and freshly ground pepper
SALAD
3 cups spring salad greens
large boiled eggs, sliced in quarters
1/3 cup Nicoise olives
1 anchovy fillet, chopped (optional)
1 (5-ounce) can albacore tuna packed in oil, drained

Whisk dressing ingredients together, then toss 3/4 of it with the salad greens.

Add olives and eggs around the edge of each salad. Add flaked tuna in the middle and drizzle with the remaining dressing.
